The YEAST for this batch was obtained by culturing up and “reviving” the yeast still found in bottles kept back by the brewery from the FIRST brew (!!)
This recipe was developed by now-retired brewer Giles Dennis, head brewer at Lees for over 30 years. Back in 1986 he built a "simple" recipe consisting of nothing but the best of the barley grown in the UK, malted via the classic Maris Otter floor-malted method resulting in a pale ale type. He would negotiate with hop growers specializing in East Kent Goldings and use only the "pick of the crop".
The "antique" copper at JW Lees put the wort through a vigorous and long boil, getting quite a caramel appearance as well as flavor palate in the end result from a recipe that is nothing but "pale" malt.
The house multi-strain yeast works on this for about 2 weeks and Lees Harvest Ale then tops out at 11.5%ABV.
